Fully Booked. Are you a wild food fanatic, forager, hunter, roadkill opportunist, budding campfire chef or just a regular foodie? If you enjoy eating sustainably sourced wild game meat then this field-to-fork course for you.
Join us for a wild weekend of deer butchery, venison preparation and feasting. Butchery of a large mammal can seam daunting at first, but with practice you will be come more proficient. On this course you will learn how to skin, joint and butcher a roe deer carcass, prepare carpaccio, marinade ribs, cut steaks, roast joints, dehydrate biltong, smoke meat, make bone broth and make links of various wild venison sausages to take home. You will break-down one animal between two people – healthier than most other red meats, low in cholesterol, rich in omega-3 and free of growth hormones – you will be all set for some healthy wild feasting over Christmas.
We understand that this can be an emotive subject, but believe that eating organic, seasonal, local and ethically sourced food is a good thing, and being involved in the process of respectfully preparing your food is even better. We always endeavour to use as much of the animal as possible, from skin and bones to antlers and tendons.
Ross is a semi-professional stalker who will take you through the process of preparing an animal from scratch. Greg is the son of a butcher and has been jointing, curing, mincing and smoking meat all his life.
Based at a beautiful private Lake District woodland, complete with bush kitchen, composting loos and large covered teaching area. Fully catered, including wood-fired pizzas and a couple of wild beverages.

Inclusions
- This course is fully catered throughout – we do our best to source food that is wild, local, organic, seasonal and nutritious. (This negates the need to buy food and bring stoves, fuel and cooking gear – it also maximises your learning time with us).
- The free loan of specialist bushcraft camping equipment – hammocks, tarps, laplander saws, fire-steels, billy cans, etc.
- Camping fees are included for two nights. This is a two day-long course with a start time of 19:30 on the Friday evening. This is to give folks time to get to us afterwork and to avoids you having to pay for a B&B, so that we can start teaching straight away on Saturday morning. The course concludes at about 16:00 on the Sunday afternoon.
- We offer a complimentary pick-up and drop-off service from and to the nearest railway station at set times.
